If you're looking for an easy side dish that adds fresh, crunchy flavor to taco night, this Creamy Taco Slaw is a must-try! It's made with simple ingredients and comes together in just a few minutes. The creamy, tangy dressing pairs perfectly with the crisp cabbage and carrots, making it a delicious topping for tacos, nachos, burrito bowls, or even pulled pork sandwiches.
Ingredients
1 small head of cabbage (red or green), chopped
1 carrot, shredded
3 tablespoons mayonnaise
1/4 cup plain Greek yogurt
2 teaspoons lime juice
1 tablespoon taco seasoning (Spanglish Asadero is a favorite!)
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon vinegar
3 tablespoons olive oil
Chop the cabbage and shred the carrot. In a separate bowl, whisk together the mayonnaise, Greek yogurt, lime juice, taco seasoning, onion powder, garlic powder, vinegar, and olive oil until smooth. Pour the dressing over the cabbage and carrots, then toss until everything is evenly coated.
We served ours over nachos with taco meat, corn, and potatoes, and everyone loved it! It's also delicious on tacos, burrito bowls, or as a fresh side for your favorite Mexican-inspired meals.
