I love carrot recipes because carrots are one of the easiest vegetables to always have on hand. They're inexpensive, especially when you buy them in bulk at places like Sam's Club or Costco, and they last for weeks (sometimes months) in the refrigerator. My toddlers and preschoolers love them because they're naturally sweet, whether they're raw or cooked, making them a staple in our house.
If you're looking for a simple side dish that goes with just about anything, these Honey Roasted Garlic Carrots are a perfect choice. Roasting brings out their natural sweetness while honey, fresh garlic, lemon juice, and herbs add incredible flavor. They're easy enough for a busy weeknight but delicious enough for holidays and family gatherings.
Whether you're trying to eat more vegetables or simply need a dependable side dish the whole family will enjoy, these Honey Roasted Garlic Carrots are sure to become a favorite.
