Ingredients
Chicken
3–4 boneless, skinless chicken thighs
1 tbsp oil
1–2 tbsp taco seasoning
Juice of 1 lime​​​​​​​

Lime Crema
½ cup sour cream or Greek yogurt
Juice of 1 lime
½ tsp garlic powder
¼ tsp salt
Street Corn
2–3 cups corn (fresh, frozen, or canned)
½ tsp cumin
½ tsp paprika
½ tsp chili powder
Salt & pepper to taste
Cotija cheese
Chopped cilantro (optional)
Toppings (optional)
Avocado
Tomatoes
Black beans
Jalapeños
Extra cilantro
Instructions:
Cook rice according to package directions.
Season chicken thighs with oil, taco seasoning, and lime juice.
Grill chicken until fully cooked (about 5–7 minutes per side), then slice.
Make street corn: mix corn, mayo, sour cream, lime juice, chili powder, cheese, and cilantro. 
Mix Creamy Lime Sauce
Assemble bowls: rice → grilled chicken → corn mixture → toppings.
